Minimum Qualifications
Five years of experience in large scale cooking, two years of which must have included regular supervision of subordinate employees or working inmates (large scale is approximately 200 meals per day).
Duties Description Supervision of food preparation and cooking in a large institution kitchen; determine the amount of food to be prepared according to the planned menu; requisition food supplies; inspect kitchen areas to insure preparation, utilization, cooking and sanitary procedures are observed; kitchen staff training as necessary and perform food preparation and cooking activities.
Creation and preparation of menu ideas for cycle menus, management and delegation of kitchen staff, the monitoring of food and labor cost, maintainenance and enforcement of proper safety and sanitation rules and regulations, and the maintenance of quality control.
The incumbent will also assist in covering for other facilities by ordering food, and providing general oversight of kitchen audits and food safety and sanitation.
